About Basha Kill Winery

BashaKill Vineyards is Sullivan County’s first Farm Winery license. Set in a picturesque region of the Catskills, Bashakill Vineyards got its start in the spring of 2005. Two varieties of vines, Noiret and Cayuga White, both of which are American hybrids developed at Cornell University, were planted in the Spring of 2006. Cayuga White is one of the most highly disease-resistant vines and allows for chemical-free growing. Noiret, a red wine grape which was just recently named by Cornell, has a very distinct black pepper character. It also serves as a good disease-resistant grape.

It's that time of the month again, for the ever so popular Open Mic Night at Aroma Thyme Bistro. All are welcome to Open Mic nights. This has become a monthly tradition at Aroma Thyme for the past three years. We have seen some incredibly talented acts. We are constantly amazed from locals to people that travel up to an hour to perform. ...Of course we have our regulars, which we love. And there's always a new act of some sort to welcome each month.

About Ommegang Brewery

Brewery Ommegang is a Belgian brewery located near Cooperstown, New York that specializes in Belgian-style ales. Ommegang began brewing Belgian-style ales in 1997. Built by Don Feinberg, an aficionado of Belgian beers, it started up in a purpose-built building based on a traditional Belgian farmhouse, set on a former 136-acre (0.55 km2) hop farm in the Susqehanna River Valley, four miles (6 km) south of Cooperstown, New York in the Town of Milford. Since its opening, Ommegang has grown rapidly — in early 2005, its owner said they have been unable to meet demand for their ales and as a result would add 40 percent to their production capacity over the next year. Don Feinberg sold Ommegang in 2003 to Belgian brewer Brouwerij Duvel Moortgat, brewers of the world-renowned Duvel Golden Ale. As a result, Ommegang Ales are made both in Belgium and in Cooperstown, New York. Duvel Moortgat brewed limited amounts of beer for Brewery Ommegang in 2006 to help meet demand, but has not brewed any since then. Brewery Ommegang currently distributes its beers in 43 states and Washington, D.C., including Alaska and Hawaii but excluding Montana, Idaho, North Dakota, South Dakota, Wyoming, West Virginia, and Mississippi. It has also recently shipped beer to Sweden in response to commercial inquiries from that country. Each summer, the brewery hosts a large beer-tasting event, known as Belgium Comes to Cooperstown. The event, which occurs on a Saturday in July, includes four hours of unlimited beer sampling of over 200 Belgian and Belgian-style beers, followed by food, live music, and a bonfire. The 2007 version of the event added a Friday night beer dinner for 250 people, with 7 courses and 14 beers to pair with them. On 7 October, 2007, Brewery Ommegang hosted the inaugural "CX @ Ommegang," a cyclocross race, organized by Team SCARR, a cycling team with Brewery Ommegang as their title sponsor. Cyclocross is wildly popular in Belgium and a cyclocross race on the grounds of a Belgian-style brewery was a natural fit. Well over 150 racers from all over New York State registered for the event. The course included a hairpin turn inside the main event tent.

Romantic recipes: From Ellenville, with love Romantic recipes: From Aroma Thyme Bistro, with love

After 12 years of being together, Jamie and Marcus Guiliano opened a restaurant in the town where they first fell in love.
And since New Year's Eve 2003, Aroma Thyme Bistro on Canal Street in Ellenville has been receiving rave reviews from customers and restaurant critics alike.
Chef Marcus has worked for several Mobil Five Star properties and prestigious country clubs, and is the recipient of many culinary awards, including one from the James Beard Foundation. Committed to certified organic and free-range, pasture-raised meats from small farms, the Guilianos also work closely with local produce growers, encouraging them to cultivate crops specifically for restaurants.
Loving the fact that they work side-by-side, Jamie says that one of the best things is "being together all the time and sharing the same interests. ... We are always there for each other. We balance each other out! ... Besides being together all day, we get to make a lot of other couples happy."
Here are two recipes from the Guilianos:
QUINOA AND YUKON
POTATO CAKES
Chef Marcus likes to serve this with a salad, or, for a bigger meal, with roasted vegetables.
1 pound small Yukon potatoes
1 cup quinoa (considered an aphrodisiac in some cultures)
1 cup water
1 sprig fresh thyme
½ cup mayonnaise or mayonnaise substitute; they use Veganaise (tofu based)
To taste sea salt
¼ teaspoon fennel pollen (found in gourmet stores and online)
Cook potatoes in plenty of lightly salted water until tender. Drain and hold at room temperature, then place in a large mixing bowl.
Bring 1 cup of water to a boil and add quinoa and thyme.
Reduce heat to low and place a cover on pot. Quinoa should take 10-12 minutes to cook.

Add quinoa to bowl with potatoes. Gently mash. When well mashed, add mayonnaise and fennel pollen. Salt to taste.
Scoop ½ cup and form into cakes.
Sear in a sauté pan on medium heat with a neutral vegetable oil. (They prefer coconut oil, but it is not neutral.)
Place in an oven set at 350 degrees F for 10-15 minutes to heat.
CHOCOLATE MACAROONS
6 cups unsweetened dried coconut flakes
3 cups cocoa powder
2/3 cup coconut butter/oil
2 cups maple syrup
1 tablespoon maca powder (from the root of a plant native to the high Andes of Peru and Bolivia, believed to be an aphrodisiac for men and women. It can be found in gourmet or health-food stores, online and wherever supplements and herbs are sold.)
Cream coconut flakes and coconut oil for 2 minutes with a mixer paddle.
Add and incorporate maple syrup, cocoa and maca powder.
Scoop ¼ cup portions.
Dehydrate for 3 hours at 110 degrees.

Deerfield Ranch Winery is an award-winning winery located in the heart of the Sonoma Valley in Kenwood, California. We specialize in small lots of handmade wine from select Northern California vineyards.


Currently we have 17 vineyards under contract and make as many as 40 separate lots of wine from those vineyards. We make several wine varietals and blends, something for everyone, a wine for every occasion. 



Robert Rex started making wine in 1972 in Berkeley, California. He has worked for many different wineries, started wineries for others, specializing in rebuilding wineries and starting wine making programs for those wineries when they changed hands. He has taught wine making and still acts as a consulting winemaker.

PJ and Robert Rex bought Deerfield Ranch in 1982 and began making wine under the Deerfield Ranch label at off-site winery facilities. In 1996, the Deerfield Ranch Winery facility was bonded. A portion of our wine is still made at the 17-acre Deerfield Ranch, located in Kenwood. 
In 2000 the Deerfield Ranch Winery was turned into a Limited Liability Company. We purchased 47 acres of adjacent land now referred to as Deerfield Ranch North. This is the site for our new 45,000-case winery, tasting room, art gallery, hospitality center, barrel aging caves, and nature center. The nature center will feature the wetland marsh and forest that are part of this spectacular property. With the harvest of 2004 all winemaking operations were moved to this new winery facility on Highway 12 (10200 Sonoma Highway) in Kenwood.

Our Winemaking style has its roots in the great French wines of Bordeaux and Burgundy. Winemaker Robert Rex believes that the blending of attributes creates the best wines. Grapes from complementary soil types and microclimates are often married to maximize varietal characteristics and complexity.

Blends can be of different varietals, grapes from varied appellations, distinct sections of one vineyard or from wines made from the same source but by varied techniques. Robert says that wine making is more like cooking than chemistry -- and he makes wine like great chefs create great cuisine.

Wine making techniques vary according to the demands of the fruit rather than any preconceived recipe. Extended fermentation times (extended maceration), controlled temperatures and extended barrel aging of our reds produce wines that are fully developed and complex yet drinkable at an early age. Both French and American oak barrels are used for barrel aging, depending on the wine. Our wines are truly handmade. We hope you enjoy drinking them as much as we enjoy making them.
