It's that time of the month again, for the ever so popular Open Mic Night at Aroma Thyme Bistro. All are welcome to open mic nights. This has become a monthly tradition at Aroma Thyme for the past three years. We have seen some incredibly talented acts. We are constantly amazed from locals to people that travel up to an hour to perform. ...Of course we have our regulars, which we love. And there's always a new act of some sort to welcome each month.

What started out 14 years ago with a couple hundred beer fanatics and a handful of craft brewers at the Culinary Institute of America in Hyde Park has grown into the longest running craft beer and food event in New York State.

TAPSM New York has grown over tenfold through the years to now encompass the entire Base Lodge facilities at Hunter Mountain. Over 30 invited breweries representing over 100 individual beers offer everything from IPAs and lagers to wiesbiers, doppel and trippel bocks, stouts, ales... pretty much any variety you know of, and probably a few that you don't.

Craft brewing is alive and well. The resurgance of craft brewing, spawned in part by the creative brewers at Saranac and Boston Brewing, has lead to fuller bodied, flavorful brews featuring rich colors, bold flavors, and imaginative ingredients.

TAP New York is also about food. Each year we offer plenty to eat. The food theme for 2011 is Comfort Food. Daily cooking demonstrations will also show you some great ideas for your own kitchen.

TAP is also a beer competition. Brewers from across the state enter their finest suds to compete for plaques and trophies. Each year on Saturday at TAP, highly qualified judges choose the best craft brewery in New York State and also the best brewery in the Hudson Valley. On Sunday, the panel of judges decide the best individual beers in both the Hudson Valley and the entire state.

Join us for our very first value wine tasting and dinner featuring wines from around the world.  The US just surpassed France and the worlds wine consumption leader of wine.  The bottom-line is that Americans just love wine.  And the current economy is not stopping people from drinking wine.  But we have noticed that people want more value, which is totally understandable. You don’t need to spend a lot to get a great bottle, unless you feel better about spending a lot.  So we have been working overtime on tasting and bringing in value wine at Aroma Thyme.  This has prompted our Spring wine sale with our lowest prices ever.  You can buy some awesome wine for $15 on certain weekdays.  Check out our website for details.

We have been long fans of Brooklyn Brewery. When we opened Aroma Thyme back in 2003 we started buying extra Chocolate Stout and Monster Ale. Extra might be an under statement. See both of these beers have a vintage date on them. That means it has the year that it was made. This was actually the first time I was introduced into drinking older or aged beer. Somebody had tasted me on a Chocolate Stout that was over a year old, and it was fantastic. It was at that point on I decided to buy extra cases of both beers every year. These extra cases keep stacking up in the wine cellar. Keep in mind that you can always buy these beers on our list. After drinking a few of the past vintages this winter we decided it’s time to officially do an event. Join us Sunday, March 27 for a vertical tasting of the Brooklyn Monster Ale.  You will get to taste four past vintages for $15. That’s right for $15 you will be drinking some of the best barley wine that has been very carefully aged. This will be an incredible event to contrast and compare how beer can actually age and improve. And keep in mind that most beer is not designed to be aged. But these full-bodied high alcohol beers go through an incredible transformation.

1st pre-HV Wine & Food Fest event set

ELLENVILLE — If you’re too anxious for the 10th annual Hudson Valley Wine & Food Fest that is scheduled for September, you may want to consider warming up for it with a series of related food and wine events preceding it over the next six months.
The first is scheduled for Sunday, March 20, at Aroma Thyme Bistro at 165 Canal Street in this Ulster County town on Sunday, March 20. Foods will be paired with wines from Cereghino Smith. Cereghino Smith is a small winery in nearby Bloomington that gets its grapes from small vineyards in New York and California.
Chef Marcus Guiliano (upper right) and his wife, Jamie, opened the restaurant on New Year’s Eve 2003. They specialize in fresh, organic local fare.
The event will be held from 4 to 6 p.m. with wine and small bites at the bar. Admission is $25 per person, plus tax and tip. Reservations, which are recommended, may be made by calling (845) 647-3000.
Attendees will be given a coupon for discount admission to the Hudson Valley Wine & Food Fest. The festival is set for September 10-11 at the Ulster County Fairgrounds in Rhinebeck. Other pre-festival events will be announced periodically, although you can check them out on your own time online.

About Unibroue
From the very beginning, Unibroue has carved out a special niche in the beer world with top quality products and a brand rooted deep in Quebec culture. It made history by becoming the first North American beer maker to use a brewing method inspired by the two-centuries-old tradition developed by Trappist monks in Europe - particularly in Belgium. Over the years, Unibroue has remained faithful to its origins even as it has grown to become an icon of the brewing world. Unibroue products take you on a journey filled with legends and fabulous tales.


All Unibroue products are made using a combination of the same basic ingredients: water, malted barley, malted wheat, wheat, yeast, hops, sugar, fruit, and spices. With the exception of La Bolduc and our U beers, their products are brewed using a traditional bottle fermentation method in which fresh yeast and pure sugar are added just before bottling. They are only partially filtered, which is what gives them their distinct appearance and natural cloudiness. This brewing method results in strong, intensely flavored and highly effervescent beers. It is almost exactly the same process used to make champagne. The only difference is that while the lees are extracted from champagne using a local cooling process, it is left to settle at the bottom of their bottles once the natural fermentation and saturation (carbonation) process is complete. This process requires strict quality controls because the addition of chemical additives or preservatives would kill the yeast. It is this method that produces the distinctive Unibroue flavor.

Style: Triple-style Golden Ale
Nose: Floral bouquet, aromas of honey, spice, coriander, malt, and alcohol
Flavor: Mildly yeasty with a complex palate of malt, fruit and spice notes followed by a smooth, dry finish
Aftertaste: Pleasantly lingers on with a warm finish

Beautiful orangey-amber colour, with a generous head. Very effervescent. Notes of citrus, spices, caramel in the nose. Very complex. Sometimes vanilla. Full bodied and complex, sweet, followed by and explosion of flavours. Clearly the best. WEIGHTED AVG: 3.58   ABV: 7.5%

Style: Abbey Style Strong Dark Ale
Color: Dark brown
Nose: Strong malt flavor, roasted aromas with chocolate, brown rum, and spice
Flavor: Slightly sweet. Enhanced by accents of roasted malt, cocoa, ripe fruit and dark spices with a smooth finish like an old port.
Aftertaste: Pleasantly lingers on

La Terrible is a dark brown beer on lees and is part of a collection of exotic and refined Unibroue beers brewed using 100% natural raw materials. It may be drunk as an aperitif or as an after dinner digestive. It is equally a perfect accompaniment to the above-mentioned dishes or a pleasant alternative to coffee.

So we are hearing from everyone how terrible business is.  And it's not just other restaurants.  It seems to be any business.  We have even felt a downturn in sales this year.

So what do we do, we go out and buy a boat load of wine.  The shipments keep coming in.  Every time we turn around 5 cases here 5 cases there.  We ordered so much we have even forgot what we ordered at times.

You are probably asking why we are ordering so much wine when business is down.  Remember we said business is down everywhere.  Well our wine vendors are really feeling the crunch too.  They can't sell as much wine as they want in the current economy.  It's a buyers market, or should we say a drinkers market.  The deals are incredible. So we decided to stock up here at Aroma Thyme Bistro.

Here is the good news, we are passing the saving on to you guys.  We can reduce the price of some of our selections by an average of $10 a bottle.  That is around a 33% reduction and more on certain wines. For example, we just got a delivery of a Shiraz that would have been $55 on our list that is a cool $32.  But keep reading it gets even better.  We are talking wines as low as $15 on our list!!!

With these kind of values out there we are tasting over 30 wines a week in order to be very selective.  Quality always comes first with us.

To even make this a better deal we are offering a Sunday to Tuesday reduced pricing.  We have made a value wine list with wines under $39 that are even further reduced. Here is how it goes.  For the month of March we are taking $9 off these bottles on Sunday, $12 on Monday and $15 on Tuesday.

We decided to make this offer valid even on wines that we paid full wholesale for.  We just figured it would be easier.  So 95% of our current wines under $39 are part of this Spring Clearance sale.

We are hoping the wine vendors keep these specials around so we can keep the prices at an all time low here.  So of course, this is first come first serve as of now.
